It appears the long-awaited opening of the Premium Iowa Pork plant in Windom is nearly at hand.
Dan Paquin, president of PIP, said Tuesday that the plant will have at least 30 employees as it launches its first phase during the first half of February. During the next few months, the plant will advance through three phases, adding employees at each level.
The three phases are: grinding, smokehouse and finally case-ready, plus ready-to-eat.
Paquin says the Windom plant will complete its third phase sometime this spring. By that point, it should employ 120 workers, including management, clerical staff, floor employees and others.
